荷葉清蒸雞飯 (Steam Chicken Rice with Lotus Leaf) |
材料:
- 雞腿/雞胸 500g 500g chicken thigh (bone/boneless)/chicken breast
- 乾荷葉 1片 1 slice dried lotus leaf
- 乾冬菇 3朵 3 Dried mushrooms
- 辣椒 1/3條 (可省略) 1/3 chili (optional)
- 蒜蓉 2瓣 2 cloves of garlic (finely chopped)
- 白飯 2碗 2 bowls of plain rice
- 老抽 1湯匙 1 tbsp. dark soy sauce
- 生抽 1湯匙 1 tbsp. light soy sauce
- 蠔油 1湯匙 1 tbsp. oyster sauce
- 五香粉 少許 a pinch of five spices powder
- 先把冬菇提前浸軟, 隔水備用
- 荷葉用冷水泡軟, 用廚房紙抹乾備用
- 雞腿/雞胸切件, 泵湯1-2分鐘, 撈出約2分鐘然後才加入調味料, 辣椒, 蒜蓉
- 把荷葉鋪在竹籠上,放入白飯鋪平, 然後放上雞件, 包好荷葉蒸12分鐘
