荷葉清蒸雞飯 (Steam Chicken Rice with Lotus Leaf)


材料:
  • 雞腿/雞胸 500g   500g chicken thigh (bone/boneless)/chicken breast
  • 乾荷葉 1片  1 slice dried lotus leaf
  • 乾冬菇 3朵  3 Dried mushrooms
  • 辣椒 1/3條 (可省略) 1/3 chili (optional)
  • 蒜蓉 2瓣  2 cloves of garlic (finely chopped)
  • 白飯 2碗 2 bowls of plain rice
調味料:
  • 老抽 1湯匙  1 tbsp. dark soy sauce
  • 生抽 1湯匙  1 tbsp. light soy sauce
  • 蠔油 1湯匙  1 tbsp. oyster sauce
  • 五香粉 少許  a pinch of five spices powder
做法:
  1. 先把冬菇提前浸軟, 隔水備用
  2. 荷葉用冷水泡軟, 用廚房紙抹乾備用
  3. 雞腿/雞胸切件,  泵湯1-2分鐘, 撈出約2分鐘然後才加入調味料, 辣椒, 蒜蓉
  4. 把荷葉鋪在竹籠上,放入白飯鋪平, 然後放上雞件, 包好荷葉蒸12分鐘
