秘制豆腐 (Tofu with Bean Sauce) |
材料: 豆腐, 菜甫, 冬菇
Ingredients: Tofu, preserved turnip, mushroom
調味: 原豉醬, 生粉水
Seasoning: Bean sauce, corn starch with water
煮法:
Cook:
1) 冬菇要浸過夜及換水(2-3次)再切粒
Soak mushroom overnight and rinse several times then dice
2) 將豆腐切成小方塊(用紙巾吸乾豆腐流出的水份)
Cut tofu into small cubes (use kitchen towel to absorb the water from the tofu)
3) 將菜甫切粒(大小隨意)
Dice the preserved turnip
4) 先將豆腐落鑊將每邊輕輕煎至少許金待備用
Fry the tofu on each side till slightly golden brown first (set the tofu aside)
5) 先將菜甫同冬菇落鑊炒再放入豆腐
Stir fried the preserved turnip and mushroom then add in the tofu
6) 加入原豉醬(2 tea spoon)炒勻
Add in 2 tea spoons (or more) of bean sauce
7) 最後加入生粉水, 炒勻便可
Last, add in the corn starch with water then gently toss
